Caramelized Onion Pasta with Chilli Oil

A delightful pasta dish that combines caramelized onions with a hint of heat from chilli oil, perfect for busy weeknights.

Ingredients

  • 400 grams of pasta (spaghetti or fettuccine)
  • 4 medium-sized onions, sliced thinly
  • 4 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 1 teaspoon of sugar
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 cup of grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)
  • 2-3 tablespoons of chilli oil (adjust to taste)

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions and sprinkle with salt. Sautรฉ the onions for about 10 minutes, stirring occasionally, until they begin to soften.
  3. Add the sugar to the onions and continue to cook for an additional 15-20 minutes, stirring frequently, until the onions are deep golden brown and caramelized.
  4. In the last few minutes of cooking the onions, add the minced garlic and cook for about 1-2 minutes until fragrant.
  5. Reduce heat to low and add the drained pasta to the skillet. Toss with the onions and garlic, adding reserved pasta water until desired sauce consistency is reached.
  6. Drizzle remaining olive oil and chilli oil over the pasta and season with black pepper. Toss to coat.
  7. Serve warm, garnished with Parmesan cheese and parsley.

Notes

Slice the onions thinly for even cooking and don’t rush the caramelization process for the best flavors. Adjust chilli oil to taste.
