- 2 cups fresh spinach, chopped
- 2 cups mushrooms, sliced
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat your oven to 375ยฐF (190ยฐC).
- In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sautรฉ for about 5-7 minutes, or until they are soft and browned.
- Once the mushrooms are cooked, add the chopped spinach to the skillet. Sautรฉ for an additional 2-3 minutes, or until the spinach is wilted. Remove the skillet from heat and set aside.
- In a mixing bowl, season the chicken pieces with garlic powder, onion powder, oregano, paprika, salt, and pepper. Mix well to coat the chicken evenly with the spices.
- In a large baking dish, spread the seasoned chicken in an even layer. Top with the sautรฉed spinach and mushrooms.
- Sprinkle the shredded mozzarella cheese evenly over the top, followed by the grated Parmesan cheese. If desired, add the red pepper flakes for a bit of heat.
- Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165ยฐF (74ยฐC).
- Remove the foil and bake for an additional 5-10 minutes, or until the cheese is bubbly and golden brown.
- Once cooked, remove from the oven and let it cool for a few minutes before serving. Enjoy your low carb oven dish!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
