- 2 medium sweet potatoes (about 1 pound), peeled and diced
- 1 cup red lentils, rinsed
- 3 cups vegetable broth or water
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (adjust for heat preference)
- 1/2 cup fresh parsley or cilantro, finely chopped
- 1/2 cup breadcrumbs (gluten-free if desired)
- 1 tablespoon olive oil (plus more for frying)
- Juice of 1 lemon
Instructions
- In a large pot, bring the vegetable broth or water to a boil and add the rinsed red lentils. Cook for about 15-20 minutes, until soft.
- In a separate pot, boil the diced sweet potatoes until fork-tender, about 15 minutes. Drain and cool.
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sautรฉ the chopped onion for about 5 minutes until translucent. Add minced garlic and sautรฉ for another minute.
- In a mixing bowl, combine the cooked sweet potatoes, lentils, onion and garlic, spices, lemon juice, and parsley or cilantro. Mash together until combined, leaving some chunkiness.
- Stir in breadcrumbs until the mixture holds together. Form into 10-12 patties about 1 inch thick and place on a lined baking sheet.
- Heat a couple of tablespoons of olive oil over medium heat in a skillet. Cook the patties in batches for 4-5 minutes on each side until golden brown and crispy.
- Transfer the cooked patties to a plate with paper towels to absorb excess oil. Repeat with remaining patties.
- Serve warm with dipping sauce, yogurt, or fresh salad.
Notes
For added crunch, ensure the oil is hot before frying the patties. Customize spices to your liking.
