- 2 large sweet potatoes, peeled and cubed
- 1 pound ground turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes, with their juice
- 1 cup corn (frozen or canned)
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (optional)
- Fresh cilantro, for garnish (optional)
Instructions
- Preheat your oven to 400ยฐF (200ยฐC).
- In a large pot, bring salted water to a boil. Add the cubed sweet potatoes and cook for about 10-15 minutes, or until tender. Drain and set aside.
- In a large skillet over medium heat, heat the olive oil. Add the diced onion and sautรฉ for 3-4 minutes until translucent.
- Add the minced garlic and diced bell pepper to the skillet, cooking for an additional 2-3 minutes until softened.
- Push the vegetables to the side of the skillet and add the ground turkey to the center. Cook for about 5-7 minutes until browned and no longer pink.
- Stir in the paprika, cumin, chili powder, salt, and pepper, mixing well.
- Add the black beans, diced tomatoes (with the juice), and corn to the skillet. Stir and let it simmer for about 5 minutes.
- In a large baking dish, layer the cooked sweet potatoes on the bottom. Pour the turkey and vegetable mixture over the sweet potatoes.
- If desired, sprinkle shredded cheddar cheese on top.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and slightly golden.
- Remove from the oven and garnish with fresh cilantro before serving.
Notes
For added creaminess, serve with a dollop of Greek yogurt or sour cream.
