Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 pound ground turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes, with their juice
  • 1 cup corn (frozen or canned)
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional)
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. In a large pot, bring salted water to a boil. Add the cubed sweet potatoes and cook for about 10-15 minutes, or until tender. Drain and set aside.
  3. In a large skillet over medium heat, heat the olive oil. Add the diced onion and sautรฉ for 3-4 minutes until translucent.
  4. Add the minced garlic and diced bell pepper to the skillet, cooking for an additional 2-3 minutes until softened.
  5. Push the vegetables to the side of the skillet and add the ground turkey to the center. Cook for about 5-7 minutes until browned and no longer pink.
  6. Stir in the paprika, cumin, chili powder, salt, and pepper, mixing well.
  7. Add the black beans, diced tomatoes (with the juice), and corn to the skillet. Stir and let it simmer for about 5 minutes.
  8. In a large baking dish, layer the cooked sweet potatoes on the bottom. Pour the turkey and vegetable mixture over the sweet potatoes.
  9. If desired, sprinkle shredded cheddar cheese on top.
  10. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and slightly golden.
  11. Remove from the oven and garnish with fresh cilantro before serving.

Notes

For added creaminess, serve with a dollop of Greek yogurt or sour cream.
