A flavorful and sweet sauce combining ripe mango, spicy habanero, and honey, perfect for grilling.

Ingredients

  • 2 ripe mangos, peeled and diced
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 fresh habanero pepper, seeded and chopped (adjust to taste)
  • 1/2 cup honey
  • 1/4 cup apple cider vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Prepare the mangos by peeling and dicing them into small cubes.
  2. In a medium saucepan over medium heat, add the olive oil.
  3. Add the minced garlic and sautรฉ for about 2 minutes until fragrant, being careful not to burn.
  4. Add the chopped habanero pepper and sautรฉ for another 2 minutes.
  5. Stir in the diced mango and cook for an additional 5 minutes until softened.
  6. Pour in the honey, apple cider vinegar, soy sauce, lime juice, salt, and black pepper; stir to combine.
  7. Let the mixture simmer for 10-15 minutes, stirring occasionally, until thickened.
  8. Remove from heat and let it cool slightly.
  9. Using an immersion blender or regular blender, puree the sauce to your desired smoothness.
  10. Taste and adjust seasoning as necessary.
  11. Let the sauce cool completely before storing it in airtight jars.

Notes

This sauce can be refrigerated for up to two weeks. Adjust the heat level by using more or less habanero.
