Ingredients

  • 6 cups mixed salad greens (such as arugula, spinach, and romaine)
  • 2 ripe pears, cored and sliced thinly
  • 1 cup walnuts, toasted and roughly chopped
  • 1/2 cup dried cranberries
  • 4 ounces goat cheese, crumbled
  • 1/4 red onion, thinly sliced
  • 1/3 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, place the mixed salad greens and massage with a little olive oil and salt if desired.
  2. Core and slice the pears thinly, then arrange the slices over the greens.
  3. Toast the walnuts in a dry skillet over medium heat for about 5 minutes until fragrant, then allow to cool slightly.
  4. Add the toasted walnuts and dried cranberries to the bowl with the greens and pears.
  5. Scatter crumbled goat cheese on top of the salad.
  6. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper until combined.
  7. Drizzle dressing over the salad just before serving and gently toss to combine.
  8. Optionally garnish with extra goat cheese or walnuts and serve immediately.

Notes

Choose ripe but firm pears for the best texture. For added crunch, include pumpkin or sunflower seeds.
