- 6 cups mixed salad greens (such as arugula, spinach, and romaine)
- 2 ripe pears, cored and sliced thinly
- 1 cup walnuts, toasted and roughly chopped
- 1/2 cup dried cranberries
- 4 ounces goat cheese, crumbled
- 1/4 red onion, thinly sliced
- 1/3 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- In a large mixing bowl, place the mixed salad greens and massage with a little olive oil and salt if desired.
- Core and slice the pears thinly, then arrange the slices over the greens.
- Toast the walnuts in a dry skillet over medium heat for about 5 minutes until fragrant, then allow to cool slightly.
- Add the toasted walnuts and dried cranberries to the bowl with the greens and pears.
- Scatter crumbled goat cheese on top of the salad.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper until combined.
- Drizzle dressing over the salad just before serving and gently toss to combine.
- Optionally garnish with extra goat cheese or walnuts and serve immediately.
Notes
Choose ripe but firm pears for the best texture. For added crunch, include pumpkin or sunflower seeds.
