Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup eggnog
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon rum extract (optional)
  • 1/2 cup chopped walnuts or pecans (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease a 9ร—5-inch loaf pan and set it aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves until well combined. Set this mixture aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  4. Add the eggs, one at a time, beating well after each addition and scraping down the sides of the bowl as needed.
  5. Mix in the eggnog, vanilla extract, and rum extract (if using) until the batter is smooth and well combined.
  6. Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined.
  7. If using nuts, fold them into the batter.
  8. Pour the batter into the prepared loaf pan, spreading it evenly.
  9. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  10. Remove the loaf from the oven and let it cool in the pan for 10-15 minutes. Then transfer it to a wire rack to cool completely.
  11. If desired, dust the cooled loaf with powdered sugar before slicing and serving.

Notes

For best results, ensure butter and ingredients are at room temperature. Avoid overmixing the batter for a light and fluffy loaf.
