- 1/4 teaspoon baking soda
Instructions
- Preheat your oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat the softened butter and 1/2 cup of powdered sugar together on medium speed until light and fluffy (about 3-4 minutes).
- Add the vanilla extract, lemon zest, and fresh lemon juice, mixing until well combined.
- In a separate bowl, whisk together the all-purpose flour, salt, and baking soda.
- Gradually incorporate the dry ingredients into the butter mixture, mixing on low speed until the dough comes together.
- Scoop out portions of dough and roll them into balls, about 1 inch in diameter.
- Place them on the prepared baking sheet, spacing about 2 inches apart, and gently flatten each ball.
- Bake for 10-12 minutes, until edges are set and bottoms are lightly golden.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack.
- Once cooled, dust generously with powdered sugar.
Notes
For best results, use softened butter and fresh lemon juice and zest. Store in an airtight container for up to a week.
