  • 1/4 teaspoon baking soda

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter and 1/2 cup of powdered sugar together on medium speed until light and fluffy (about 3-4 minutes).
  3. Add the vanilla extract, lemon zest, and fresh lemon juice, mixing until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, salt, and baking soda.
  5. Gradually incorporate the dry ingredients into the butter mixture, mixing on low speed until the dough comes together.
  6. Scoop out portions of dough and roll them into balls, about 1 inch in diameter.
  7. Place them on the prepared baking sheet, spacing about 2 inches apart, and gently flatten each ball.
  8. Bake for 10-12 minutes, until edges are set and bottoms are lightly golden.
  9. Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack.
  10. Once cooled, dust generously with powdered sugar.
